All Mixed Up Red Beans and Rice

Howdy!! 
When we visited New Orleans I tried a few different red bean and rice dishes and I loved them...minus the meat he he! They also went great with beignets. So I wanted to make my own and since it's been a while I went straight for my True Blood Cookbook! Oh True Blood how I miss you. I did make this before...but it had been a while!

Here is an abridged Sam's Red Beans and Rice! YUM! 
First step, soak the beans in a pot with a few inches of water overnight. In the morning drain any left over water. 
Next cut up your onion, celery and bell pepper. Heat the bacon fat in a pot then add in the veggies, pepper and cayenne and stir until they are golden. 
Cut up the sausage and ham then add to your golden veggies. We opted to forgo the salt pork and added a pinch of salt to the mix. Stir until meat is slightly browned and then add in the red beans and water. 
Make sure to add enough water so that the mixture is covered. Let cook for a few hours, stirring occasionally. Of course Jack got a piece too...but what's new ha ha!  Next take a wooden spoon and mash half of the mix to one side, breaking up the beans a bit. While you wait, make your rice to add to the dish! We opted for brown rice this time around. Continue stirring for another 30 mins until beans are soft and then serve.
There you have it...red beans and rice! Delish!

Meaty Brunch

Morning!!

Made a yummy meat-tastic breakfast for Craig!

Starting with 3 eggs, ham, shredded cheese, a sprinkle of hot sauce, dash of milk and some pepper. I added a piece of toasted bread with butter for the base.

Then finished with some crispy bacon! Yum! Craig was a fan but might need to save some for later, it's quite filling.

Ranchero Eggs

Howdy!

Happy Saturday! This morning I made Craig eggs and bacon but with a spicy twist. I added salsa, cheese and pepper. 

Then I took half of an avocado and attempted to put a poached egg in the middle...but I failed to flip properly ha ha! So he got a broken egg yolk in the middle. No complaints though!

The avocado added a creaminess that enhanced the eggs and really brought his regular Sat brunch to another level. 
Craig was in love.
I was very happy with myself! 
Gotta take care of my baby...especially when he bring me such pretty flowers!

Beef and Bacon Pie

Howdy!
Game of Thrones is back!! Woooooo! 

To celebrate I made a Modern Beef and Bacon Pie that Craig picked out, from the Game of Thrones Cookbook. 

We also found a GOT beer for the occasion! Very hardy he he! 

Also please don't mind my silly videos, it's been a long week. :)

To start I made pie dough (from page 9) using spice, egg yolk, flour, water and butter. I decided to do the pre-cooked crust, but won't next time...that will allow more room to mold the crust around the bacon.
I rolled the dough out with the empty brew he he!
Start creating your bacon lattice, going over and under each piece. Create a large square of bacon and place in oven. Bake for 10 mins and then remove.  
Next, in a pan, cook the veggies-onion, potatoes and carrots. We decided to add in some mushroom and garlic, for a more flavorful taste. Stir and cook until onion is golden.
Add the floured beef and cook until browned. Then mix in the beef broth and seasoning. 
Once well cooked, let the meat cool. Then add to the pie.
 Place to the bacon lattice on top and place in oven. Bake for 40 mins. 
Let stand and serve!
I tried asking Craig what he thought...but all I got was a bunch of mumbles...his mouth was too full of bacon! LOL
Also, after placing in the fridge over night for some tasty left overs, it's easily cut into perfect pie slices. 


Great for serving to guests.

Eggy Muffins

Morning, 
I wanted to do something a bit different this morning. 
So I mixed together eggs, cheese, green onion, pepper and bits of bacon in a small bowl. I also added a tsp or so of milk...it helps make the eggs a little fluffier.

Then I poured the mixture into separate muffin tins. I baked them for about 15 mins and ta-da! Little breakfast quiche muffins! he he 

I went ahead and made some extra bacon and added some hot sauce (Craig loves it) lol!
