King's Landing Sweet Corn Fritters

Howdy, 
Tonight I made a pre-Game of Thrones treat straight from the Game of Thrones Cookbook and King's Landing. 
Sweet Corn Fritters! 
I always love when whole corn kernels are used in recipes, especially in cornbread, so I immediately knew these fritters would be no exception. To start first take kernels from about 2 ears of corn, saute with butter and set aside. 
In a bowl whisk the egg and milk together, then mix in the flour and cornmeal. Add a pinch of pepper and the corn. Heat two tablespoons of oil in a non-stick pan until hot and then it's ready for the sweet corn batter! 
Place about 2 tablespoons of the mix into pan and fry until golden brown. These heat up pretty quick so make sure to keep an eye on them and flip quickly. Remove each one and set on a towel to cool...also to soak up some of the oil. Then plate with your favorite dipping sauce. Some honey could do nicely as well he he!
These fritters were, as suspected flavorful and delicious!

GOT Modern Blueberry Tart

Game of Thrones is Back!
The race for the throne is back this month and I couldn't be happier! To celebrate I made a Modern Blueberry Tart from the A Feast of Ice and Fire Cookbook! Perfect for those tense yet sweet moments GOT brings. 
This tart was super easy but there is also an option to make a Medieval Tart which I will try in the future he he! I started by preheating the oven to 375 degrees and got out some pastry dough. The book recommends their Lemon Pastry Recipe from page 10. Yum! I pressed the dough into a tart tin evenly. Next, after rinsing them off I poured my blueberries into the tin, leaving a few for later. 
Then I sprinkled the cinnamon sugar evenly over the top of the berries and popped them into the oven. After about an hour (or once the filing started bubbling) I took out the tart and topped it off with the remaining berries and some powdered sugar. 
Once the tart cooled a bit it was ready to serve! This made for a very happy viewing party ha ha! Scrumptiously tart with a lightly sweet flavor. As the book suggests, it pairs well with some champagne! he he

Comfort Foods

Howdy, 
First of the menu, Penne and Arrabbiata Sauce with a tangy carrot and tangelo salad! Pasta will always be a comfort food for many, us included. We tend to watch our carbs so this was a real treat!
This is another dish that I came home to. My sweet hubby already had it prepared and even down-played the spiciness on my portion. I guess Arrabbiata means "angry sauce" named for it's heat/spice due to the combination of tomatoes, garlic and dried red peppers. I didn't mind the spice it had and found the creamy mozzarella melting around the pasta  mouth-watering! I mean...who wouldn't! It was glorious! 
The side dish of carrots and tangelo was juicy and hearty. I enjoyed it a lot. A combo that neither of us would have thought to put together.

Next we have the yummiest comfort food of them all, grilled cheese! This specific grilled cheese has a healthy twist including beets that I very much appreciated. I present Fontina and Beet Grilled Cheese Sandwiches. For these I need to quote straight from the card, 
"These gourmet grilled cheese sandwiches combine creamy fontina with sautéed arugula and—for a layer of delightfully earthy, tart and sweet flavor—pickled beets." 
That would have been enough for me to down this sweet sandwich but then you rub garlic on the toasted sourdough. Come on....amazing! The citrus salad was very seasonal and refreshing as well. Good flavor combo.
Such a perfect comfort food feeling. Brought me right back to my mom's kitchen. I will definitely have to remake this!

Quiche from Blue Apron

Howdy, 
So I was beyond excited to get the items for this dish. Maybe more excited than someone should be about food LOL but I love me a good Quiche! I rarely get to have one so it was extra special. Side note: Kelly's French Bakery on the Santa Cruz west side have AMAZING quiches. So buttery and scrumptious!
This Blue Apron Mushroom and Goat Cheese Quiche had everything. It was savory and flavorful, marrying each ingredient together creating a satisfying dinner. I liked that I knew what was in the quiche and it was yummy but a bit healthier than maybe a store bought one would be. Adding the goat cheese was a smart choice too, giving the quiche a little bit of tanginess. I will definitely try to recreate this!
In all honesty...I did not like the Arugula salad...arugula is not my friend and the lemony dressing did not help. My taste-buds immediately rejected it! Craig ate mine ha ha!

Beautifully Broken Bisque

Howdy!
 The lust for blood has returned...True Blood that is and I wanted to pay homage to one of the best characters I've ever had the privilege of watching. He is charming, snarky, eloquent, strong, weak, passionate and cultured. A true villain that you couldn't help but be fond of. Some nights I will re-watch TB snuggled in my covers and skip to Russell's scenes. To honor his bloodlust and his love for Talbot here is his Beautifully Broken Bisque. This dish wasn't too complicated and tuned out to look just like the original. 
In a sauce pan, heat up the olive oil and add the onions. Cook the until soft then add in the carrots and then the beets. Cook for another 5 mins. Add the lemon, salt, pepper, broth (I chose veggie) and water. Bring to a boil and reduce the heat to medium. Let simmer for about 30 mins and make sure the beets are soft.
 Remove the beets/mixture from heat and let it cool a bit. Then add to your mixer. I only had a blender handy but it worked he he! Once pureed your bisque is ready!
Plate the bisque while warm and garnish with sour cream. We added a bit more pepper and seasoning as well. The bisque was gentle if that makes sense...light and quenching. The beet flavor stood out and while it wasn't powerful, it was hearty. The sour cream completely adds to it as well. Looking like a true bloody bisque, Talbot would have been proud! 
FYI: Be careful with the beets/bisque...parts of our kitchen looked like vampires tore thought it LOL!
On top of the bisque, I made hush-puppies! A Maryanne/Sam recipe. These little balls of dough were perfect and fun to dip! First you combine the flour, baking powder and salt in a large bowl. Add in the cornmeal and stir to blend. Add in the eggs, one at a time, mixing well with a wood spoon, until smooth.
Pour in the buttermilk and mix until absorbed. if the batter is too dense add in more buttermilk. I found that I needed to add a little bit more flour and cornmeal. Once the batter holds it's shape, add the green onions and garlic.
Heat up your vegetable oil in a pot, about 2 inches deep, until it reaches 360 degrees. Plop in rounded tablespoons of batter and watch them form. It's kind of interesting to see them take shape, no two the same. You can drop in about 4 to 5 at a time, it really depends on the size of pot and/or batter.
Turn the frying batter over in the oil to make sure all sides cook evenly. This should only be about 3 mins.
Once cooked, drain each one on a paper towel. You may dust them with more pepper or seasoning if you would like. Voila! perfect hush puppies! These tricked my brain, while I liked them I thought they were supposed to be sweet. They resembled beignets a bit ha ha! I wanted to cover them in powdered sugar! Instead I stuck to the bisque and Craig to his hot sauce...always with that hot sauce!

Bread Pudding First Attempt

Morning!! 
Bread pudding has always been yummy but my true love for it bloomed while we were in New Orleans. For our anniversary date we went to the Commanders Palace which in it's own right was magical and had their famous bread pudding for dessert. Every bite was a piece of heaven!
 I found an older cook book for the Palace and decided to try their bread pudding recipe. For an amateur baker I believe it turned out rather well but there were a few little problems. Which is why I say that this is my first attempt! Even though I really don't need more delicious pudding around the house. I have absolutely no control when it comes to desserts...I can not be trusted! he he

Pudding Ingredients:
1 cup Sugar 
8 tablespoons Butter; softened 
5 Egg; beaten 
1 pint Heavy cream 
1 dash Cinnamon 
1 tablespoon Vanilla extract 
¼ cup Raisins 
12 slices French bread, fresh or stale; 1" thick 

Rum Sauce:
1 cup Sugar 
2¼ cup Water 
1 Cinnamon stick; OR 1 teaspoon Cinnamon, ground 
1 tablespoon Butter, sweet 
½ teaspoon Cornstarch 
1 tablespoon Rum, light or dark 

To start I cut up my bread into 12 slices and preheated my oven to 350. 
Then started on the mixture, adding the sugar and butter first then the eggs (beaten), cream, raisins, cinnamon and vanilla.
 In a small pan I added the mixture and placed the bread pieces over the top. I let them soak for 5 mins then flipped them over for another 5 to 10 mins. After the bread has hopefully soaked up a lot of the pudding mixture, push them to the bottom of the pan. 
Place the pan in a larger one with about a few inches of water. Cover the pan with tinfoil and place in the oven.
Cook for 35 mins and then remove the tinfoil and cook for an additional 10 mins.
 I think this might have been where I went wrong, I may have not cooked the pudding long enough. It was still a bit soupy. I tried to cook it for a bit longer and it got a little firmer.
While the dish cooked I made the rum sauce! In a pot I stirred together the sugar, water (2 cups), ground cinnamon and butter, bringing it to a boil. Then added the remaining water and cornstarch, switching to a simmer and stirring. The sauce is supposed to become clear but I couldn't get it that close. Either way it was yummy! Once "clear" I removed the pot from the heat and added the rum.
I spooned out some of the bread pudding into a bowl and added the rum sauce....what resulted after that moment can only be described as pure satisfaction...the look of contentment and joy washed over our faces as we consumed bite after bite. This bread pudding was warm, sweet and hearty. Even though it was not quite Commanders status it was no less scrumptious. I will definitely be giving this a second try!!!

Mint Chocolate Chip Fudge

Good Morning!! 
Last night I made some yummy Mint Fudge! 
They turned out great so I decided to bring them into work. Mint has always been a favorite of mine so when I saw this simple recipe for fudge I had to try it out. Plus who doesn't love mint chocolate chip....a crazy person that's who!
What you will need: 
3 1/4 cups of white chocolate chips
2 tablespoons of butter
1 can of sweetened condensed milk
2 to 3 teaspoons of mint extract, NOT peppermint
Green food coloring
and 3/4 cups of mini chocolate chips
First you need to line an 8x8 square plan with tinfoil and some cooking spray, next microwave the white chocolate chips and butter for 1 minute. Stir together and make sure that all chips are melted.
Mix in the condensed milk and mint. Add the green food coloring, about three drops. Once mixed completely let the mixture sit and cool off a bit, then fold in half of your mini chips!
Add the fudge to your pan and press evenly. Add the remaining mini chips to the top of the fudge. Refrigerate for about 2 hours then VOILA!

Suicide Squad Cocktail

Happy Almost Halloween!! 
Cheers to drinks, candy and costumes!!
Playing off of a SSquad shot from http://allmommywants.com/cocktail-the-suicide-squad/ called the Purple Joker I decided to make my own with a blue twist. 
You will need: 
2 oz Blue Curacao
1 oz Peach Schnapps
1/2 oz Rum
1/2 oz Cherry Vodka
1 tsp Grenadine
3 oz Ginger Ale
2 tbs sugar 
3 drops green food coloring
1 tbs Simple Syrup
Mix three drops of green food coloring with your sugar, make sure to crush it together evenly and set aside in a shallow plate. Add the simple syrup to another shallow plate.
Take each ingredient and pour into your bar shaker, ginger ale last. This will add a nice fizz to your cocktail. I always use a bar mixer with the measurements on the side (shhhh don't tell anyone)...might be cheating but I don't want to mess it up! Next, dip the rim of your glass/tumbler in the simple syrup then into the sugar. You can add as much sugar as you'd like he he!! Drop 3 to 4 cubes of ice into your glass and pour your mixture in and voila! A beautiful blue bubbly mix topped with a green rim of sugar! 
This fizzy mix has a kick but the sugar rim definitely softens the blow! Plus some cherry vodka doesn't hurt he he! The ratios were perfect and nothing was too overpowering! I will totally be adding this to my list of cocktails to make again. I think we need to start a bar list!

Hummingbird Cake

Happy Easter! 
This year I wanted to make something truly delicious for my family and had seen a recipe for Hummingbird Cake on MyRecipes. Turns out that this is a really popular cake and it seemed so interesting that I wanted to taste it for myself. I didn't do a play-by-play for you...I thought about it but for once it was nice to really focus on making the cake. It was just me and my mixer! The recipe included some different ingredients like bananas and pineapple...which I had never thought about adding to cake batter. 

As I suspected it was the most delicious, mouthwatering, sweet and savory, home-made cake I have ever had! It smelled like banana-nut bread and tasted like a dream...a carrot cake/banana-nut bread hybrid of pure yum! The cream cheese frosting paired well, giving it a little extra sweetness. The pineapple was not overwhelming either and the pecan...OMG the pecans!  I had to literally stop myself from consuming the whole thing. Here is the recipe from MyRecipes.com  and their link! 

Ingredients/Directions:

  • 3 cups all-purpose flour
  • 2 cups of sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • large eggs, beaten
  • 11/2 cups vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • (8-ounce) can crushed pineapple, undrained
  • 2 cups chopped bananas
  • 1 cup chopped pecans
  • Shortening
  • Cream Cheese Frosting
  • 1/2 cup chopped pecans

Preheat oven to 350°. Whisk together flour and next 4 ingredients in a large bowl; add eggs and oil, stirring just until dry ingredients are moistened. Stir in vanilla, pineapple, bananas, and 1 cup chopped toasted pecans. Spoon batter into 3 well-greased (with shortening) and floured 9-inch round cake pans.Bake at 350° for 25-30 minutes or until a wooden pick inserted in center comes our clean. 
Cool cake layers in pans on wire racks 10 minutes; remove from pans to wire racks, and cool completely (about 1 hour).
Place 1 cake layer on a serving platter. Spread 1 cup Cream Cheese Frosting over cake layer. Top with second layer, and spread 1 cup frosting over cake layer. Top with third cake layer, and spread top and sides of cake with remaining frosting. Arrange toasted pecan halves in a circular pattern over top of cake.
You should definitely make this cake!!

Carol's Cookies

Good Morning and......Walking Dead!!!! 
Okay I had to get that out...he he. 
In honor of the Dead I made Carol's cookies.

 I found the recipe on the AMC webpage, check out the link HERE! 
The ingredients are very simple...considering that in a post-apocalyptic world you don't have the freshest materials available.
Starting with the shortening, apple sauce, brown sugar and white sugar. Mix until shortening is blended.
Next add in the baking powder, baking soda, flour, pinch of salt and vanilla. Mix well.

While you let the dough sit for about 5 mins, start melting the chocolate. Of course, being from California, I had to use some Ghirardelli chocolate.
Carefully melt the bar on low heat in a pan/pot. It will melt quickly so be sure to keep it "moving". It only takes a quick second for the chocolate to burn. 

Pour the chocolate over the dough and mix well. Then place dollops of dough onto a non-stick cookie sheet and bake for about 12 mins at 350. And ta-da! Let cool and serve. 
The cookies really turned out well. Using the apple sauce didn't take away from the overall flavor and mixing in the melted chocolate saturated the whole cookie. Mmmmmm chocolate!
They are a bit too molasses-y for my taste but that can be easily fixed by removing the brown sugar....maybe I have just had too much pecan pie lately! he he 
Now, while I look at the flowers, I can eat a yummy cookie!
