Inglorious Bastards Strudel

Good Morning! 
For the holidays and my love of Quentin Tarantino movies I made an apple strudel based on the movie Inglorious Bastards. 
I started by putting on my red lipstick and preheating the oven.



Then looking over the recipe from Dave Wattshead chef at the Cotswold House Hotel. Link Below.

First you start by mixing the apples (sliced of course), sugar, spices, salt and sultanas (raisins). Mix and cook until the apples have started to break down.

Then remove from heat and let cool.

While you wait, toast bread and pecans on an oven tray. Then use a food processor (few pulses) to chop up the bread and nuts. Once apples have cooled, add the chopped nuts, bread and rum.


Next, take about 8 sheets of filo pastry, the melted butter and a pastry brush and begin making your layers for the crust/pastry. Brush layers with the melted butter and sprinkle Demerara sugar (I used brown sugar) on each. This is the part where I get a little overzealous....and probably add too much sugar he he!
Try to: "Place the first sheet of filo pastry length ways away from you and brush liberally with melted butter. Next, take another sheet of filo pastry and overlap on to the first by three fingers. Brush with butter and sprinkle the pastry with 2 tsp of Demerara sugar. Repeat this process with the other filo pastry sheets. Butter the second layer, butter and sugar the third layer, and then only butter the fourth layer. "

When finished spoon the apple filling onto the pastry, leaving space to fold in the sides and roll the pastry up. Brush with butter as you go. Once finished rolling, place in the oven on a large baking tray (buttered). 
Sprinkle more sugar on top and bake for about 25 mins.
Remove from oven, sprinkle lightly with icing sugar and make sure to serve warm with cream, yum!
 
In lieu of creme, I added some vanilla and caramel ice cream. Delish! I am sure Hans would approve.

Goodie Bars

Good Morning, 
Last night I made some yummy candy using my Great Grandma's recipe. They are Nut-Goodie Bars (as she called them). 
While I want to keep this recipe a secret...they are not hard to make. Let's just say there are two kinds of chips, some peanut butter and marshmallows. 
These are one of my favorite treats during the holidays!

How we got engaged

On Nov. 8th we were planning to go up to my parents’ house...or so I thought. Instead we went south. After a while we made a circle ending up in Gilroy. Craig of course wouldn't say anything about our obvious detour. There are only a few places I know in the Monterey/Gilroy area so I was quickly blindfolded. We drove for a bit and then the engine stopped and Craig took off the blindfold revealing an adorable bungalow at the Monterey Vision Quest/Wild Animal Park. We had visited before, just for a tour about the animals and facility. I really loved the huge elephants and zebra.
I knew something was up...but I wasn't 100% sure…so I decided to go with the flow! LOL! We spent time in the bungalow and then ventured out to meet a few of the Zoo animals and to feed the elephants carrots for their bed time ritual.
I thought maybe he would propose at dinner, instead he surprised me during the elephant bedtime, proposing in front of Butch the 10 thousand pound bull elephant. It was so perfect. Trainers brought me a little gift basket and card, and as I was reading, beside me Craig knelt on one knee. I was so nervous and really didn’t know what to do, besides say YES!

Fun fact: Craig asked if he could have Butch hand me the ring…but apparently in the past he had eaten two rings and they only got one back. So that was not an option.
The Monterey Wild Animal Park takes care of animals that need help and a better life. Often they used to preform and are retired. Staff spend lots of time creating a fulfilling life and forever home for them. I love seeing them flourish! Thank you Craig for creating this beautiful memory!

Inglourious Basterds

Candied Sweet Jesus Potatoes...Yam Version

Howdy,

What could be more perfect for Thanksgiving than Pecan Pie and some Sweet Potatoes! Nothing but maybe yams!

I made the pie pretty quick, just lots of sugar and pecans. Then I started on the potatoes, which came from my handy True Blood Cookbook; from a sweet little section about Lettie Mae and the Reverend Daniels. 
Man I miss True Blood :(

First boil them until soft (check with a fork) then drain the pot and let them cool. After then cool, enough, peel. Some of the skin starts to come off while boiling...so that helps. 
Next slice and arrange in a dish. I went ahead and made a bit more, lots of folks to feed. 
Then add the butter and lemons to the top. 
Mix the water, sugar and vanilla in a bowl, then spread over the butter. Next add the corn syrup over all. 
To top it off sprinkle with the cinnamon. 
Bake for about an hour, until potatoes/yams are glazed.
Let cool and enjoy.

Mini Mortal Muffins

Howdy!

Tonight I made Mini-Mortal Spicy Corn and Cheddar Muffins from the True Blood Drinks and Bites book. Yummy!

These are from one of my favorite True Blood moments...with my favorite vampire, Eric Northman!
First you mix together the flour, cornmeal, sugar, baking soda, baking powder and salt. In another bowl whisk together the buttermilk, egg and chile. Then combine them and mix. 

 Next, fold in the butter then cheese and green onions. After scooping into muffin tins, cook for about 10 mins or until muffins are golden. Let cool and enjoy!
These muffins were scrumptious. As Craig put it "hardy, savory and delicious."
Extra tip: Add a little sprinkle of cheese to each muffin before baking.
