Once Upon A Dream....

In the middle of an ordinary day, in an ordinary park...magic happened!
As if engagement shoots weren't fun enough, Craig and I did a shoot inspired by Sleeping Beauty's first meeting with Prince Phillip in the enchanted forest. 



This seemed too perfect of an opportunity to pass up...since our wedding theme is loosely based on the fairy tale. The results turned out to be both magical and fantastic! 





Such a handsome guy he he!! 
I feel so lucky to have someone so supportive in my life. Thanks for letting me talk you into this Craig!

Carol's Cookies

Good Morning and......Walking Dead!!!! 
Okay I had to get that out...he he. 
In honor of the Dead I made Carol's cookies.

 I found the recipe on the AMC webpage, check out the link HERE! 
The ingredients are very simple...considering that in a post-apocalyptic world you don't have the freshest materials available.
Starting with the shortening, apple sauce, brown sugar and white sugar. Mix until shortening is blended.
Next add in the baking powder, baking soda, flour, pinch of salt and vanilla. Mix well.

While you let the dough sit for about 5 mins, start melting the chocolate. Of course, being from California, I had to use some Ghirardelli chocolate.
Carefully melt the bar on low heat in a pan/pot. It will melt quickly so be sure to keep it "moving". It only takes a quick second for the chocolate to burn. 

Pour the chocolate over the dough and mix well. Then place dollops of dough onto a non-stick cookie sheet and bake for about 12 mins at 350. And ta-da! Let cool and serve. 
The cookies really turned out well. Using the apple sauce didn't take away from the overall flavor and mixing in the melted chocolate saturated the whole cookie. Mmmmmm chocolate!
They are a bit too molasses-y for my taste but that can be easily fixed by removing the brown sugar....maybe I have just had too much pecan pie lately! he he 
Now, while I look at the flowers, I can eat a yummy cookie!

Happy St. Patrick's Day

Howdy!
For as long as I can remember my mom has always made corn-beef and cabbage for St. Patty's. So this year, I decided to give it a try.
 First I took the corn-beef and placed it in a stove-top safe pot/dutch oven and sprinkled the packet of seasoning over the beef (this comes in the corn-beef packaging). Over medium heat I cooked the beef until internal temp reached 150 degrees. 
About 50 mins/per pound.
Next I added in the potatoes. Be sure to cut them in half and add as many as you like. 
I decided to go with smaller red potatoes...my fav! 
Then I added half of a yellow onion (chopped) and some carrots. Cook until they are almost tender and then add in the cabbage(cut into wedges). With the cabbage there really wasn't too much room left so I placed some of it on top of the corn-beef. Once the lid is placed back on it helps to steam the cabbage.
Cook for about 15 mins. Remove from heat and let sit for another 15 mins, then it's ready to serve. 


Slice meat across the grain and add as much of the broth and veggies as you wish. 
This turned out really well...I know it is pretty simple but I always worry he he! 

Hopefully everyone at work will be glad to have some at our potluck today. It's green and traditional...two of the requirements he he. Thanks for reading!

Chili and Cornbread Skillet

Howdy! 
Tonight I made a Chili and Cornbread Skillet from a recipe I found on Pinterest. 
I've made a "chuck wagon chow" before, with corn, beans and ground beef so this wasn't too far from what I know how to do...but I thought it would be fun to try!
To start, preheat the oven to 400 and brown the ground beef in an oven safe skillet/pot. Once the beef is completely cooked,no more pink, pour out the excess fat. 
Add the corn, black beans, tomatoes, chili beans and tomato sauce. Stir. Let simmer for 10 mins. *Be sure to add some chili powder for an extra kick!
Mix the cornbread up and add a cup of cheddar cheese. Fold in. Remove the chili from heat and drop corn/cheese mixture into the pan of chili by spoonfuls.
 Gently spread around top. Place in oven. Then bake for 20 mins or until top is golden.
 The cornbread will expand quite a bit, which was kinda cool to see! he he! Next slice into and serve. *Check cornbread before dividing.

I really love how the over all flavor turned out, the mix of the black beans and chili beans. Plus the cornbread on top was sooooo good! I have been cutting back on the carbs so this just made me melt. It was nice to have an actual meal!
